Candied king-crab and scallops. Oscietra caviar, lemon scented beurre blanc with sweet clover.
Roasted salsify section, sprouts and crackers.

Braised and caramelised, truffle and foie gras broth.

Root vegetable mousseline and samphire. Vegetable consommé with vine leaves.

Grilled and roasted, red wine civet sauce and oyster mushrooms.
