Served with an assortment of homemade churned butter and aromatic herbs oil infused in a coffeepot.

PRINCESS SCALLOP AND SHRIMP CHAUD-FROID
Yuzu marinade and pineapple slivers, served like ceviche.
Smoked corn mousseline with charcoaled caramel.
Coconut candies in a frosted coconut shell.

An expected egg, cooked like a soufflé.
Parsnip velouté with green apple infused oil.
Seared foie gras crumble tart.

Flame seared tuna tataki skewers on a river rock.

SIGNATURE ROASTED LOBSTER
Cooked three ways:
Wild lobster tail from Gaspésie or Îles de la Madeleine, based on availability.
Poached, roasted and caramelized on charcoal.
Garlic butter and lemon confit gremolata.
Served with beet churros.
Fresh raw and crunchy vegetable salad, with ginger and sesame.

VEAL AND TRUFFLE

Veal eye of round, aromatic herbs and citrus peel crust.
With salted butter veal jus caramel.
Fresh pasta flambé in a Parmesan wheel at the table.
Creamy portobello and porcini mushrooms, cognac and truffle sauce.
